The things you will exchange for your card will be your email address, name, physical address, phone number and sometimes your age and date of birth.
As you enter the gift card site you will notice the statement that to get the free gift card you will need to "complete participation requirements."
These participation requirements are offers from other companies which you will need to sign up for with valid information. How do you think they make money from your free $250 gift card - by getting a commission on the other offers for which you sign up to fullfill your participation requirements.
